A co-creative flavour journey - The meal of the future with Plant2Food and Like a PRO
Collaborative masterclass/kitchen session with Matthew Orlando, Endless (formerly Amass and NOMA), sisters Malene and Astrid Søgaard from Pure Dansk, Christoffer Norton owner at the Michelin restaurant Domestic in Mejlgade and Sarafina Kimø, Fermentorskab.
The masterclass will focus on how to make everyday dishes green and flavourful with Danish legumes and culinary side tips.
What does a more plantful future look like? Join Plant2Food and the Like A Pro project on a fun and creative plant journey during Aarhus Festival. In just one hour, we'll get an insight into the plant universe of the future and develop new and innovative ideas together with researchers and companies on how the green meals of the future can look, taste - and fit into Danes' everyday lives. Come and join us in developing the wildest ideas for the green meals of the future.
In this co-creative hour, sisters Astrid and Malene, who are behind the Aarhus-based company Pure Dansk, will focus on Danish organic lentils, peas and beans, and give you inspiration on how you can easily create tasty and filling meals with legumes - it will be possible to get samples of this.
Matthew Orlando, Endless (ex. Matthew Orlando, Endless (formerly Amass and NOMA) talks about the potential of upcycling side streams in the food industry and gastronomic world with a desire to create new flavours based on planetary boundaries.
Christoffer Norton, owner of the Michelin-starred restaurant Domestic in Mejlgade, Aarhus, has collaborated with Matthew Orlando on developing a menu based on upcycling side streams and sustainable cuisine - and will provide samples.
Sarafina Kimø, initiator of Fermentorskab, will focus on the community around fermentation and healthy, local ingredients and will provide samples.
